Everything you need is pictured in the picture up there, except for a lime. Limes are my favorite and I forgot to put one in the picture! It's best if you use the FRESHEST of everything you can find.
- mangoes (4-5)
- garlic (2 cloves)
- cilantro (one bunch)
- mint (a few leaves)
- red onion (about 1/4 medium)
- jalapeño (seeds removed)
- fresh lime juice (1 whole lime)
- salt and pepper (to taste)
Chop everything up and mix it together. It's best if you can make it the day or at least a few hours before and refrigerate it. This makes enough for 5-6 people as a snack.
This is a very rough recipe. Take out what you don't like and add more of what you do. I've made it both with and without the mint. With and without the jalapeño. With and without the garlic. Really the base for us is mangoes, cilantro and onion.
I chop it by hand if I'm only making a little bit for me (one mango, and just a little bit of everything else) or you can do it in a food processor, just don't let it get too liquidy or ... processed. It's better if everything is chunky.
Eat with tortilla chips - the saltier the better!
